Gandma’s Zucchini Bread

Ingredients

  • 3 eggs
  • 1/3 c canola oil
  • 1 c sugar
  • 3 c grated zucchini
  • 2 tsp vanilla
  • 3 c flour
  • 1 tsp baking soda
  • 1/2 tsp baking powder
  • 1 tsp salt
  • 1 tsp cinnamon
  • 1 c chopped nuts or raisins

Instructions

  • Preheat oven to 350° F
  • Grease & flour a loaf pan
  • Beat eggs well
  • Add oil, sugar, zucchini & vanilla, mix well
  • Sift together flour, baking soda, baking powder, salt & cinnamon
  • Add sifted dry ingredients to the wet mixture & mix well
  • Add chopped nuts, raisins or some combination of the two
  • Bake for 55-65 min or until tooth pick comes out clean

Notes

For those who are watching their cholesterol intake, the bread has come out well when 5 egg whites were substituted for the whole eggs.

For those who need to control their sugar intake, the bread has come out well when erythritol has been substituted for the sugar.

I have also added a small can of well drained, crushed pineapple to the recipe and it was delicious.
